 36 White Bread, about one and a half loaves, left out to dry or stale
 1 ½ Butter
 1 ½ cups Diced Celery
 1 ½ cups Diced Onion
 1 Egg
 1 tbsp Poultry Seasoning
 Salt and Pepper to taste
 Small Bowl of Chicken Broth

Sauté butter, onions and celery in skillet until soft. Dip a couple of pieces of bread together into the broth, squeezing out the excess and place dampened bread into a pan. Do this with all the bread slices. Add the sautéed vegetables, poultry seasoning, egg, salt and pepper and mix all ingredients together. If the stuffing is too dry, add another egg. Place the stuffing into a casserole pan. Make sure the layer of stuffing is not too thin or it will be too crunchy. Bake in a 350 degree oven for 45 minutes. Uncover and bake for an additional 20 minutes. If stuffing seems dry, add a little chicken broth before the final baking time.
