 8 oz Cream Cheese, softened
 ¾ cup Butter, softened
 1 cup Powdered Sugar
 2 ¼ cups Flour
 ½ tsp Baking Soda
 ¼ tsp Vanilla

Preheat the oven to 325 degrees F. Beat cream cheese, butter, sugar and vanilla in a large mixing bowl at medium speed with a mixer until well blended. Add flour and baking soda and mix well. Refrigerate dough for 30 minutes. For each snowman, shape dough into two small balls, one slightly larger than the other. Place balls, slightly overlapping, on ungreased baking sheet; flatten with bottom of a glass dipped in powdered sugar to help prevent it from sticking. Repeat with remaining dough. Bake 18 to 20 minutes or until light golden brown. Cool on a wire rack. Sprinkle with powdered sugar or decorate with frosting as desired. Optional: Cut a miniature peanut butter cup in half for a hat on the snowman.
