Preheat oven to 375 degrees F. Cream together the butter, sugars, peanut butter, egg and vanilla. Add the baking soda. Add 1 1/4 cups of the flour to the dough and mix thoroughly. If the dough is sticky slowly add the remaining 1/4 cup of flour until the dough is firm enough to roll into a ball. Roll into balls. Press the balls into nut cup pans. Bake 8 to 10 minutes and remove from oven and immediately press a Reese Cup into the center of each cookie. Let cool in the pan for ten minutes and then take a toothpick and loosen the edges and transfer the cookies to a wire rack to cool completed.
