If desired you could add cheese to this casserole.
2 lbs Thawed, dry shredded hash brown potatoes
2 Cream of Chicken Soup
1 Melted Butter
1 Diced onion
3 Crushed Ritz Crackers
2 Melted Butter
8 oz Sour Cream

Mix hash browns, soup, one melted stick of butter and onion. Pour into a greased 9x13 inch baking pan. Crush the Ritz crackers and add to the two sticks of melted butter and mix. Pour the cracker mix on top of the potato mixture. Bake uncovered in a 350 degree oven for one hour.
