
Dissolve yeast in 1/4 cup of warm water. Stir in 2 2/3 cups of warm water, salt, sugar, shortening and five cups of flour. Beat until smooth. Mix in remaining flour to make dough easy to handle. Turn dough on to lightly floured board and kneed until smooth and elastic (about 11 minutes). Rub dough with soft butter. Place in large greased bowl, cover and let it rise in a warm place until it doubles in size (about one hour). Dough is ready if impression remains. Punch dough down. Spread out onto pizza pan and bake in a 425 degree oven for 30 to 35 minutes.
