 5 lbs Potatoes
 1 Small White Onion, diced
 1 Boneless Ham Steak, diced
White Sauce
 6 cups Milk
 12 tbsp Butter
 12 tbsp Flour
 2 tbsp Salt
 1 tsp Scant Pepper

Use a large 5 liter casserole dish. Peel and wash five pounds of potatoes. Thinly slice each potato. Parboil potatoes in a large saucepan for five minutes then remove from heat and drain. Put potatoes in the large casserole dish. Dice up the ham and onion. Add the ham and onion to the potatoes. In a medium sauce pan on medium heat, melt the butter. Once it's melted add the flour, salt and pepper using a whisk until thoroughly combined then stir constantly for a minute longer. Whisk in the milk and stir frequently until the sauce thickens. It is ready when it coats the back of a spoon or your whisk. Pour the sauce over the potatoes and gently mix together. Bake in a 350 degree F oven for one hour or until thick and bubbly.
