
Place a potato between two chopsticks and slice the potato in thin slices leaving 1/4 inch at the bottom unsliced. The chopsticks prevent you from slicing all the way through the potato. Slice the remaining potatoes the same way and place all potatoes on a greased baking sheet. Melt butter in a skillet on medium heat, add garlic and cook for 2 to 3 minutes or until lightly browned, stirring frequently. Brush the garlic butter over the potatoes making sure you get between the slices. Bake in a 425 degree oven for 45 minutes or until potatoes are fork tender. If desired, sprinkle with cheese and bake an additional 5 minutes. Remove from oven, salt, pepper and garnish with parsley.
