
Cut the bread into one inch cubes, this is about 8 to 10 loosely packed cups. If time permits, spread the bread out on a baking sheet and let it dry out for several hours or bake it in a 300 degree oven for 15 to 20 minutes. Place the cubed bread into a greased 9x13 baking pan. Mix together, eggs, maple syrup, milk, vanilla, and cinnamon. Pour mixture over the bread, lightly tap down the bread so it is submerged. Cover and refrigerate overnight. Cover with foil and bake in a 350 degree oven for 30 minutes. Uncover and bake an additional 15 minutes. If desired mix together the powdered sugar, milk and vanilla. Drizzle over the warm French toast and serve.
