Cajun Dry Rub Recipe - Great for deep frying turkey or chicken.
NOTE: The recipe amount supports up to an 18 pound (lb) bird. Any higher than 18 lbs, it is recommended to double the recipe for full dry rub coverage.
Mix all ingredients together thoroughly in a bowl.
After cleaning the turkey/chicken, use paper towels to pat-down the turkey/chicken.
Try to get as much moisture off of the skin - this usually takes about half the roll of paper towels.
Place the turkey/chicken in a turkey plastic bag, then dump the entire dry rub mixture into the bag. Twist the bag shut and carefully shake the bag around, allowing the dry rub to cover the bird.
NOTE: If you are missing an area of dry rub on the bird, set the bag down and open the bag. Then, grab a handful of the dry rub excess and pat-down the rub into the area. You may need to repeat shaking/patting down the dry rub. Make sure the bird is covered all over, inside and out.
