Banana Blueberry Bread

Banana blueberry bread recipe - first learned by Lydia at camp and now a family favorite

 ½ cup butter, softened
 1 cup sugar
 2 eggs
 1 cup mashed bananas (approx. 2 bananas)
 1 cup frozen blueberries
 1 cup all-purpose flour
 1 tsp vanilla
 1 tsp baking soda
 ¼ tsp salt
 ½ cup quick cook oats

Preheat the oven to 325°F

Grease and flour a 9 x 13 baking pan (I usually use glass, but metal would probably work as well)

Cream together the sugar and butter

Beat both eggs into the butter/sugar mixture

Add the mashed bananas and vanilla to the butter/sugar/egg mixture

Add the flour, oats, baking soda, and salt to the wet ingredients

Place the frozen blueberries in a separate bowl - add about 1 TBSP of flour (just enough to coat the blueberries). Then gently stir the coated blueberries into the batter.

Fill pan and bake until light brown on top and toothpick comes out clean. (Anywhere from 30 - 40 minutes)
