Smashed Potatoes

 Olive Oil
 Salt and Pepper
 Fresh Herbs and Garlic

Boil potatoes until until fork tender. Preheat oven to 450 degrees. Grease the baking pan and use a potato masher to gently smash each potato, rotating both ways so it looks like a thick cookie. Drizzle with olive oil, season with salt, pepper, garlic and herbs. Top with cheese if desired. Bake for 20 minutes.
